The wine
Vin de Paille is one of the Jura’s historic specialities. Healthy bunches are left to dry off the vine?–?traditionally on straw mats or racks?–?for at least six weeks, concentrating both sugars and aromas. This wine comes from parcels rooted in clay-limestone and marl soils. The terroir’s minerality and acidity help to balance the wine’s considerable sweetness. Manual harvests go hand in hand with strict sorting. After drying off the vine, the grapes undergo a late press followed by slow fermentation. The wine is then aged for 3 years in cask.
The amber hue heralds an expressive bouquet. The rich, complex nose reveals apricot, raisin, honey, orange peel and fig, enhanced by touches of sweet spice and walnut. On the palate, generous concentration of candied fruit and honey meets lively acidity, flowing into a long, layered finish.
