The wine
Aligoté has long been regarded as a secondary grape variety, often used to craft simple, fresh wines. In recent years, however, passionate winemakers such as Koji and Jae Hwa have been giving it a new dimension. The terroir for this cuvée lies in the Côte de Beaune, Burgundy’s celebrated heartland, where predominantly limestone and clay-limestone soils provide excellent drainage and allow the vines to dig their roots deep into the subsoil. In the winery, the bunches are rigorously sorted before being gently pressed. Fermentation is natural, triggered exclusively by native yeasts. The wine matures in oak casks, mainly seasoned, to preserve purity of fruit while lending subtle aromas and a delicate hint of wood.
The intense golden hue reveals shimmering highlights. The nose is elegant and fresh, led by lime and green apple notes combined with floral touches of acacia blossom. On tasting, the attack is vibrant and precise, its lively acidity perfectly balanced by the wine’s fullness.
About the Producer Koji et Jae Hwa
After founding the internationally renowned wine trading house Lou Dumont, Koji and Jae Hwa established their own estate in 2012, purchasing vines in Prémeaux-Prissey and Clos La Brunelle. They continued to expand in 2016 when the couple purchased vines in the Marsannay, Hautes Côtes de Nuits and Gevrey Chambertin appellations. That same year, the estate was awarded organic certification. Today, the 6-hectare operation also follows biodynamic practices, respecting the lunar calendar and using herbal teas. The use of sulphur tends to be limited. The latest vintages have gained in stature, displaying finesse and elegance in equal measure, making them fine wines for gourmet dining. The couple is now branching out into Champagne, in the Côte des Bar region.
