The Petit Chablis appellation stretches across both sides of the Serein. This is a 100% Chardonnay to share among friends for a dinner party. The appellation was established in 1944 and is characterised by its lively and perfumed wines. This bottle can be enjoyed in the years that follow its production, perhaps alongside a seafood dish that will chime well with the cuvée’s mineral, salty side. The grapes are picked by hand at full maturity and, once in the winery, are pressed before vinification. The maturation that follows lasts around 9 months, then the wine is settled and bottled. This is a deliciously citrusy wine, at once lively and mineral.

Petit Chablis Billaud-Simon (Domaine) serve at a temperature of 10°C. It will pair perfectly with the following dishes: Gratin de fruits de mer, Huîtres fraîches, Salade d'été.

    Domaine Billaud-Simon was founded in 1815 and covers 17 hectares of the most beautiful terroirs of Chablis, with four grand crus (Les Clos, Les Preuses, Vaudésir and Les Blanchots) and four premier crus (Montée de Tonnerre, Mont-de-Milieu, Fourchaume and Vaillons). In 2014, the domaine was bought by the Faiveley family, who confirmed their determination to maintain the Bernard Billaud style with precise wines, which stand out for their fine minerality.
