Nicolas Maillet produces a Pouilly-Fuissé with acidic, citrus aromas. Powerful and fine at the same time, it lingers well on the palate. Coming from 60-year-old clay-limestone soil plots, it undergoes alcoholic fermentation in 300 to 500 litre barrels. A true gastro wine, its roundness and creaminess mean it can be paired with tender fleshy seafood such as lobster or langoustine. Meat lovers will enjoy it with a guinea fowl with morels.

Pouilly-Fuissé Nicolas Maillet serve at a temperature of 13°C. It will pair perfectly with the following dishes: Moules au safran, Homard grillé au beurre salé d'Olivier Roellinger, Bisque de homard.

    The wine

    Information about domain Nicolas Maillet

    In 1999, Nicolas Maillet took over the family domaine (which had existed for four generations) following his father who then brought his grapes to the local cooperative. It has doubled its surface area to 7 hectares, 5.4ha of which are Chardonnay on the slopes of the small village of Verzé in Saône-et-Loire, in the heart of the Mâconnais. The vineyard has been certified as organic since 2011. Vinification is essentially done in vats with minimum intervention.
