Located near to Dijon on beautiful plateaux, the Chardonnay grape takes up 3 hectares of Domaine de la Cras’ vineyards. It belongs to the Côte d’Or’s Chambre d’agriculture who have conferred the management of the domain to Marc Soyard. This producer learnt the trade at Domaine Bizot in Vosne-Romanée. The philosophy underlying his work has respect for wine and low-intervention vinification at the heart of it. Firstly, the vines are grown organically with biodynamic practices. The harvests are carried out by hand. This white wine began with a direct pressing that gives it its pure profile. The yeasts are natural and very little sulphur is added. Maturation is carried out in a combination of new and used barrels for 15-18 months. The nose is delicate and fruity. It has notes of pear and apple that bring much flavour alongside a lovely tautness. You can age this wine for 2-5 years. Serve it at 10-12°C. Pair this wine with grilled fish or roasted veal.

    The wine

    Information about domain Domaine de La Cras - Marc Soyard

    Domaine de la Cras was bought by the City of Dijon in 2013, and it stretches across 160 hectares between the communes of Dijon, Plombières-lès-Dijon and Corcelles-les-Monts. The idea of this purchase was to preserve the city's green-belt land. Marc Soyard is the wine maker running the 8 hectares of certified organic vines that are worked biodynamically. 5 hectares are planted with Pinot Noir and 3 with Chardonnay. Originally from the Jura, Marc worked for several years at Domaine Bizot in Vosne-Romanée. The most important aspect of his work is his respect for nature. “Wine is a natural thing, a living thing, there's nothing artificial about it.” The vinification carried out involves very little intervention. The wines from this domain can be aged for a few years before being enjoyed.
