This Grand Cru is named after the white colour of its soil and covers a steep slope at the south-eastern edge of the Grand Cru hill, facing the Montée de Tonnerre. It receives limited sun exposure in the afternoons and produces wines of excellent finesse. Clothilde Davenne buys her supply of grapes from here, which are harvested by hand and carefully sorted before she vinifies them and leaves them to age in stainless steel vats at a low temperature. The maturation period on fine lees lasts for 12 to 18 months, after which the wines are filtered and bottled.
This cuvée needs to be stored in the cellar for several years before it can truly open up and express its terroir. It has a pale golden colour with a tinge of green which develops into a light yellow, with an aroma of citrus fruits, lime blossom, almonds and flint. On the palate, this wine offers the perfect balance between roundness and acidity, with a saline-finish. A delightful Chablis that would pair perfectly with fish or seafood.

    The wine
