An excellent introduction to the superb Chablis wines of Domaine Billaud-Simon which is now part of Maison Faiveley. More info

This village appellation Chablis is a lovely introduction to Domaine Billaud Simon! They like to remind us that this vineyard is nicknamed “Porte d’Or de la Bourgogne” (Burgundy’s Golden gate), and this is indeed a wine with a lovely, yellow-gold hue. It might surprise you with its lively and perfumed character. Its typical Chablis nose gives off a bouquet of peaches and citrus. The well-rounded palate offers up brioche aromas typical of Chardonnay, though there is a freshness running through it. Once in the winery, the ripe grapes are sorted and pressed. Alcoholic fermentation takes 15 to 18 days before a 9-month maturing process.

Chablis Billaud-Simon (Domaine) serve at a temperature of 12°C. It will pair perfectly with the following dishes: Anguille en matelote, Cabillaud poché, Lotte à l'armoricaine.

Peak: Drink until 2022

    Information about domain Billaud-Simon

Domaine Billaud-Simon was founded in 1815 and covers 17 hectares of the most beautiful terroirs of Chablis, with four grand crus (Les Clos, Les Preuses, Vaudésir and Les Blanchots) and four premier crus (Montée de Tonnerre, Mont-de-Milieu, Fourchaume and Vaillons). In 2014, the domaine was bought by the Faiveley family, who confirmed their determination to maintain the Bernard Billaud style with precise wines, which stand out for their fine minerality.
