Domaine de Pas de l’Escalette farms all of its vines biodynamically. This cuvée offers the richness and complexity of the finest wines of the Languedoc. The vines are perched at 350m of altitude, on terraces of limestone scree typical of the appellation. The harvests are manual and 60% of the grapes are destemmed. The wines undergo natural fermentation in wooden barrels before maturing for one year in large barrels. The nose is fruity and rich, much like the palate, with very ripe tannins. Cellar this wine for two or three years before tasting.

Terrasses du Larzac Le Grand Pas Pas de l'Escalette serve at a temperature of 15°C. It will pair perfectly with the following dishes: Brochettes d'agneau grillées, Chapon au citron et au miel, Côte de bœuf maturée.

Domaine du Pas de l'Escalette in Poujols was founded by Julien and Delphine Zernott in 2003. The 20-hectare vineyard is situated at an altitude of 350-400 metres and is made up largely of around 60-year-old vines. The certified biodynamic wines are recognised for their finesse.
