This rimage - a reduced Banyuls wine (meaning that it hasn’t been exposed to oxygen during the ageing process) - is bottled very soon after mutage, adding alcohol to stop fermentation, to conserve the fruit and the wine’s freshness. When making this wine, mutage is carried out with the cap. This means that the alcohol is added before pressing the grapes, so the wine is still in contact with the solid parts of the grapes. The obtained fortified wine is left to macerate in contact with the cap for 20 days before being transferred to vats where it is left to age for seven to eight months depending on the vintage.
Mainly made using Grenache with a little bit of Carignan to add more structure, this Banyuls has beautiful aromas of small black berries, most notably blackcurrant and blackberry. The palate’s rich, flavourful structure brings an intensity and an uncommon freshness to the wine.

Banyuls La Rectorie (Domaine de) Thérèse Reig serve at a temperature of 15°C. It will pair perfectly with the following dishes: Roquefort, Bavarois au chocolat, Tajine de poulet aux olives.

Cuvée presentation

Information about domain La Rectorie

Situated in Banyuls in the Roussillon, at less than a kilometer from the sea, La Rectorie (7 hectares) was passed down to the Parcé bothers. Having returned to the family property in the 1980s, Thierry and Marc extended their Banyuls production to that of very high quality dry white wines. Work in the vineyard wears the peasant traces of their great-grandmother, Thérèse's roots (animal draught cultivation, manual harvests, use of local grape varieties, etc.). Nowadays, it is managed by Marc and Thierry Parcé, for whom the age of the vines, the use of the ‘original' grape varieties and the controlled yields (20 to 25hl/hectare) are the key to successful vinifications. The domain bottles around 80,000 bottles every year. Most of the production is centered the vinification of Collioures rouges, but La Rectorie also produces white wines as well some Banyuls (15% of production). The wines are not fined.
