This Chénas is the fruit of sixty-year-old vines cultivated on granite soils with a little clay. Although yields are controlled, the grapes achieve peak maturity due to their south-easterly exposition. Tasting opens with intense ripe red and dark fruit notes supplemented with spicy and smoky touches. We would advise waiting at least 3 years before drinking. Curious enthusiasts should be aware that this wine is vinified from whole bunches without the addition of sulphur. Daily punching down of the grapeskin cap (pigeage) extracts the perfect amount of aroma and texture. The wine is then aged on the lees in reduction (without sulphur) for 10 months. Unfortunately, yields are low at 1,200 bottles.

Chénas Philippe Pacalet serve at a temperature of 16°C. It will pair perfectly with the following dishes: Caillettes aux blettes, Yakitori blanc de poulet, Potée bourguignonne.
