This wine is a 100% Chardonnay from Jura within the Côtes du Jura AOC. It comes from the plots “En Bouillot” and “Champ Levot”.
After the harvesting and a manual sorting process, fermentation is carried out naturally (by native yeasts). Maturation takes place for 11 months in oak barrels. The grape juice is not filtered and has no added sugar.
During tasting, the wine reveals a beautiful golden yellow colour with aromas of lemon and minerals. On the palate the wine is balanced, with fruity notes joining in with the harmony. Age this wine for 3 to 5 years. Serve it at 12-14°C after opening it two hours in advance.
Moving from his native Champagne a little while ago, Bruno Bienaimé was immediately seduced by the Jura's Arlay terroir and the grape varietal that thrives there, the Savagnin. Naturally demanding in his work, Bruno set the bar high by setting to work on his 2 hectares with a horse, provoking admiration from his neighbours. This practice avoids tamping down the soil, preserving microbial and animal life essential to the blossoming of the vines. The vinifications are natural, with no additives or filtering. As well as growing Savagnin, Bruno cultivates Chardonnay, Trousseau and Pinot Noir vines.
