Having spent some time working in Spain in Ribera del Duero, Frédéric Signonneau decided to come back to Touraine and create his own domain in 2007 – rising out of the remains of the family estate in Cravant les Coteaux. Signonneau cultivates just over eight hectares of vines according to strictly environmentally-respectful methods. Harvests are manual and they practice gravity-flow winemaking in cement vats. Sulphites are only added when deemed necessary.
