The grape macerates for 20 days in open, truncated, wooden containers. The alcoholic and malolactic fermentation occurs in the same containers, equally for 20 days. The wine is then raised in casks and barrels for 18 months. The wine matures for 6 further months in the bottle. All of this makes for a wine that is deep and balanced with a surprising finish.

Toscana IGT Massa Vecchia La Querciola serve at a temperature of 15°C. It will pair perfectly with the following dishes: Entrecôte grillée au feu de bois, Osso bucco, Lapin aux olives.
