For nearly a century (1867 to 1960), the Dalmore distillery, in the heart of the Highlands, belonged to the Mackenzie family. The company emblem is the stag's head, taken from the Mackenzie clan's coat of arms, in reference to a legend in which the Chief of the Clan Mackenzie saved King Alexander III of Scotland from a stag which came close to goring him during a hunting party. Prior to that, the business had belonged to Alexander Matheson, the founder of the distillery in 1839, who had made his fortune in the Chinese silk trade and opium smuggling. In 1960, the Mackenzie family sold the house to friends who owned the Whyte and Mackay blended brand. Their whisky is aged in sherry and bourbon casks and is blended by Richard Paterson, just like Jura whisky. This son (and grandson) of a family of blenders is a legend in the world of whisky, with a career in malt spanning more than 50 years. This distillery was one of the first to specify the age of its whiskies, and started selling single malts in 1875. This company has made headlines in the specialist press several times, with a number of examples of its whisky having set records at auction.
This whisky is matured in the best bourbon barrels, then in 30-year-old Apostoles sherry barrels from producer Gonzalez Byass. It is complex and soft, with a certain generosity.

The wine

It was with quite a bang that Dalmore joined the ranks of collectible whiskies, when the group's master blender Richard Paterson presented the Constellation range in 2014. This interstellar symphony of 43 bottlings (1964 - 1992) was the culmination of several decades spent in the depths of warehouses sculpting a distillate with a complex and versatile character in the ex-sherry casks that have become the trademark of the Dalmore Single Malt. Selected from the Gonzeles Byass bodega, these Oloroso, Mathusalem (The Dalmore 32 Year Old 1974 Cask #504, 52%) and Amoroso (The Dalmore 1981 Amoroso Sherry Finesse) barrels offer such aromatic density and range that the profile of The Dalmore has become indistinguishable from the sherries produced at the bodega which, along with Richard Paterson, has co-designed the Dalmore style.
