Distilled from non-smoked, malted Scottish barley and produced using spring water from Snow Mountain, this whisky has been matured in Oloroso sherry barrels for many years in the subtropical climate of Taiwan. The heat and humidity accelerate the ageing process, increasing the amount of evaporation which reaches 15% after only two years. When a whisky is aged in a more temperate climate, this amount of evaporation would be seen after ten years. Bottled at cask strength, at 57.1%, without added colouring or chill-filtration, this single cask has only produced 540 bottles. The deep, amber whisky reveals an intense nose that mixes notes of dried fruits, nuts, spices, marzipan, chocolate, and mocha. The powerful palate with its very smooth texture is full of blackcurrant and pepper flavours. Its strength can require a drop of water to be added to the glass. This whisky possesses a huge complexity with ginger, medicinal herbs, and toasted notes detectable. A rich single cask that has taken many first places at the World Whisky Awards.

The wine

Two extraordinary personalities are responsible for Taiwan's first independent distillery, Tien-Tsai Lee (TT Lee), founder of the King Car group and owner of Kavalan, and Dr Jim Swan, the consultant behind a huge number of the distilleries opened across the world over the last 15 years, including Penderyn (Wales), Cotswolds (England), Victoria Caledonian (Canada) and several other projects in Scotland, such as Clydeside (Glasgow) and Lindores Abbey (Cupar). It was in 2006 that Kavalan distilled its malt for the first time. Since then, the distillery has frequently caused a stir with bottlings that reflect its perfect mastery of ageing in ex-bourbon casks and Oloroso and Fino sherry casks below subtropical latitudes. Like new distilleries, Kavalan has released numerous single cask and cask strength bottlings to respond to massive demand around the world.
