A small quantity of botrytised grapes go into this cuvée, conferring a sweetness which is reminiscent of an Auslese wine. Well-rounded and unctuous in the mouth with notes of lemon zest and a biting acidity.
The Willi Schaefer domaine only comprises four hectares, but its small output is making a reputation for itself. Located in the village of Graach in the Moselle region, it is now famous for producing the most delicate and mineral white wines in Germany. Willi and his son Christoph owe the credit for this success to their Himmelreich and Domprobst terroirs, and their unstinting work: manual labour, rigorous selection during harvesting, and close attention to the various vinification and ageing processes.
