    The wine

    Simply known as “Rosette” until 2010, this cuvée is named after a hectare of clay-limestone soil in the Courgis area. The vines are farmed following biodynamic principles and the grapes are harvested late. The domain also favours natural vinifications, with long fermentations in barrels on fine lees. The wine is then matured in 225-litre barrels for 11 months. The wine has a very fruity nose and is deliciously rich on the palate. There are intense, lingering notes and candied fruits.

    Although Alice (from the Jura) and Olivier (from Burgundy) De Moor export most of their production, they have over the years forged an excellent reputation for themselves. Their wines have been certified organic (Ecocert) for 10 years. With low yields, manual harvests and very little sulfur used, these two winemakers visibly work with meticulous care both in their viticulture and vinifications. The 2009 vintage marked their first year running a small négociant business on the side, in the Chablis and Chablis Premier Cru appellations.
