    The wine

    There’s no need to explain the excellence of Anselme Selosse, a Champagne producer coveted around the world. This cuvée speaks for itself, an extra-brut blanc de blancs that reflects tenacious work in the vineyard and the winery. Whilst this producer has rejected the constraints of official organic certification, there are no chemical additives, pesticides, or herbicides used. When it comes to vinifying the grapes, the methods are slow but sure, with nothing left to chance. The wines are matured at length in the winery and should be aged for a little longer once in your cellar at home to reach its full potential. In the glass, this champagne has a golden hue with delicate bubbles. It gives off aromas of white fruit, apple, almond, and plum, as well as gentle spices like nutmeg, ginger, and star of anise. This bouquet makes way for an ample and powerful palate perfectly balanced by a fine minerality. This is a cuvée complex enough to be enjoyed on its own, though it can also be served alongside elegant dishes.

    Maison Jacques Selosse in Avize was founded after the Second World War. Since 1974 it has been managed by Jacques’ son Anselme, with the assistance of his son, Guillaume. Their champagnes have earned a reputation for being some of the finest in the region, achieving a rare level of perfection. They are highly sought after by Champagne lovers and showered with praise by the critics. The domain owns 8 hectares of vines and produces less than 60,000 bottles a year. The vineyard follows biodynamic practices but has decided not to seek formal certification so as to remain flexible. Grass is allowed to grow freely around the vines and the land is worked with horse-drawn ploughs. The wines, developed in barriques, are very exciting to drink and full of character although they may surprise novices unfamiliar with this type of champagne.
