This Échézeaux Grand Cru is grown in deep, pebbly, alluvial soil on a fully south-facing plot. The vines are hand-harvested and hand-sorted. There are some years when Domaine Faiveley decides to make wine from an entire crop. Daily grape treading is used to extract a beautiful colour. The pressing is gentle to keep only the finest juice. Aging then lasts between 16 and 18 months in French oak barrels, 60% of which are new.
The colour of the wine, is a bright and clear ruby colour. Its nose, complex and very pleasant, the palate a wide range from fruity to more fiery notes. It is elegant and perfectly balanced. The tannins are smooth after a few years of rest.
You can keep this Grand Cru Échezeaux for twenty years without any problem. For pairing with food, there are many possibilities available, such as a Beef Tournedos with Roquefort blue cheese sauce or a wild boar stew.
The Faiveley family has been running this domain since 1825. In 2005 Erwan Faiveley succeeded his father in the management of the property which is one of the largest ones in Burgundy: 10 hectares of Grands Crus and nearly 25 hectares of 1ers Crus, including several monopoly climates (Gevrey-Chambertin 1er Cru Clos des Issarts, Beaune 1er Cru Clos de l'Ecu or the Clos des Cortons Faiveley Grand Cru). The vineyard remains very fragmented with an average appellation size of 1 hectare. In general, the wines of the domain are dense and fruity.
