    The wine

    This cuvée crafted by Domaine Pierre-Yves Colin-Morey, currently run by Caroline Morey, is a Chassagne-Montrachet premier cru. This domain makes a point of taking great care of their vines. Grass is grown in the vineyard to naturally limit yields and encourage the fruit to ripen, and chemical herbicides are banned. The grapes are harvested by hand and thoroughly sorted before being transported to the winery.
    The bunches are vinified with little intervention, malolactic fermentation is allowed, and maturation takes place in large containers that don’t mark the wine. Temperatures are controlled at low levels so the wine doesn’t need to be filtered before bottling.
    This is a cuvée with great depth, freshness, and ageing potential. Be as patient as you can and wait for this wine to fully express itself. It can be served with rich dishes such as fish, creamy mushroom risotto, or a cheese board.

    Created in 2005, the Pierre-Yves Colin Morey domaine extends over 6 hectares on the Saint Aubin and Chassagne-Montrachetet appellations. After learning about his father's domaine (Marc Colin), Pierre-Yves decided to start his own domaine with his wife Caroline Morey. Mentioned by the specialised press as one of the "most gifted winemakers of his generation" (Revue du Vin de France), his wines, mostly from Chassagne, Meursault and Saint Aubin, must be discovered. Pierre-Yves Colin runs this small domaine with his wife Caroline, completing the production by buying grapes (one third of the volume). In the vineyards, responsible and sustainable farming prevails and in the winery, vinification needs little intervention. One of the strong points of this field is the élevage, which is mainly in demi-muids and is very subtle. This name, widely recognised by fans and professionals, is undeniably a safe bet!
