    To all those who love Pinot noirs from the Côte de Beaune, here is a wine which should be enjoyed without delay. It is the signature wine of a domaine which has 24 hectares of vines grown on very fine plots. The Pinot noir that this Savigny-lès-Beaune Premier Cru is made from has undergone a careful cultivation, which most notably translates into ploughing the soils to encourage local microbial life. Fertilisers are not applied, but ripeness and complexity is favoured at the expense of green harvesting which limits yields. In the cellar, the Pinot noir is matured for between 16 and 18 months in containers with a proportion of new wood which is reconsidered depending on the quality of the vintage.
    Renowned for the elegant execution of its work, here the domaine offers us a fine wine with a cherry-red colour tinted with purplish gleams, developing towards garnet. This unleashes aromas of flavoursome red fruits (cherry, raspberry and redcurrant), little black fruits, leather and liquorice. Supple and full-bodied, it can be readily appreciated when it is young and can easily be aged for up to ten years during the best vintages. A lovely discovery.

    Located in Chorey-lès-Beaune, at the foot of the Corton mountains, Domaine Tollot-Beaut extends over 24 hectares including very fine plots. This vineyard was created at the end of the 19th century and is run by three cousins, Nathalie, Jean Paul and Olivier. The vine is traditionally ploughed, no fertiliser is brought and a green harvest means they can limit the yields so the remaining grapes can mature. Élevage of red wines varies between 16 and 18 months and the proportion of new barrels, always minor, depends on the vintage. This rigorous and long-term work means they can make elegant, balanced wines. The wines have a fine personality are of a high standard. Unfortunately, most of the production is exported and it is difficult to obtain these wines in France.
