    The wine

    Que dire d'un flacon de chassagne-montrachet 1er cru ? Sinon que c'est un des très très jolis blanc que la terre ne puisse porter… La côte des blancs à Beaune rassemble les plus beaux villages connus pour leurs délicieux chardonnays : Chassagne-Montrachet, Puligny-Montrachet ou Meursault.
    Ici, nous sommes sur le lieu-dit Les Caillerets, sur le haut des coteaux, où le domaine Coffinet-Duvernay exploite des parcelles.
    Le maître mot du domaine est d'intervenir le moins possible et de laisser le vin se faire, c'est ainsi que la fermentation malolactique n'est pas empêchée, et apporte son gras et son opulence à ce vin.

    Information about domain Coffinet-Duvernay

    Generations of wine makers have passed on their talent at Domaine Coffinet, found at the heart of Chassagne-Montrachet, since the year 1860. In the 1980s, Laura Coffinet and her sister each inherited half of the domain. Laura brought her husband, Philippe Duvernay, onto the scene and founded Domaine Coffinet-Duvernay. With access to some of Chassagne's finest premier cru parcels, they are committed to representing the unique character of each terroir. Their key strategy is to spend as much time as possible in the vineyard, since this is where they consider the wine to be made. The vinification involves as little intervention as possible so that the juice can evolve in its own way. As tradition dictates, they let malolactic fermentation take place in order to bring a certain body and opulence, so fitting for a fine Chardonnay. The maturation length depends on the cuvée, though there is never an excessive amount of new wood used. What results is a generous palate with exceptional balance.
