Le domaine de la Cras, situé sur les communes de Dijon, de Plombières-lès-Dijon et de Corcelles-les-Monts, comprend actuellement huit hectares de vignes sur les 160 hectares totaux qui constituent le domaine. La ville de Dijon, soucieuse de produire du vin sur sa propre commune, a en effet racheté ce domaine et en a confié la gestion à Marc Soyard, ancien du domaine Jean-Yves Bizot. Le domaine est orienté vers une production biologique et naturelle du vin, préférant les vins vivants et en cela contemporain, aux vins traditionnels, modernes. Ce domaine pourrait s'agrandir encore de 13 hectares supplémentaires qui seraient confiés par la ville de Dijon.
La philosophie du domaine est de produire des vins naturels et vivants depuis des raisins sains, naturellement mûrs et équilibrés. Cette volonté, Marc Soyard l'a confortée depuis son passage au domaine Jean-Yves Bizot qui lui a transmis quelques-uns de ses secrets au sujet des grands vins blancs et rouges de la région.
Cette cuvée provient de vignes plantées à Ladoix et âgées d'une soixantaine d'années. Elevée en fûts entre 15 et 18 mois, cette cuvée est ambitieuse, pleine d'énergie et de vitalité, un superbe rouge signé Marc Soyard. Son nom, Hermaion, signifie en grec la chance, la providence, qui advient à celui qui sait la provoquer, la chercher.
Domaine de la Cras was bought by the City of Dijon in 2013, and it stretches across 160 hectares between the communes of Dijon, Plombières-lès-Dijon and Corcelles-les-Monts. The idea of this purchase was to preserve the city's green-belt land. Marc Soyard is the wine maker running the 8 hectares of certified organic vines that are worked biodynamically. 5 hectares are planted with Pinot Noir and 3 with Chardonnay. Originally from the Jura, Marc worked for several years at Domaine Bizot in Vosne-Romanée. The most important aspect of his work is his respect for nature. “Wine is a natural thing, a living thing, there's nothing artificial about it.” The vinification carried out involves very little intervention. The wines from this domain can be aged for a few years before being enjoyed.
