Crozes-Hermitage Dard et Ribo (Domaine) serve at a temperature of 15°C. It will pair perfectly with the following dishes: Tournedos Rossini, Aubergines grillées, Crumble de potimarrons, de marrons et de lard fumé.
Dard et Ribo? This is THE northern Rhône domaine to follow if you are looking for “wholesome” wines. The winemakers who founded this estate, René-Jean Dard and François Ribo, decided to cultivate their grape varieties biodynamically in order to preserve their fruitiness, as well as the purity and distinctive qualities of the terroir. This Crozes-Hermitage has therefore been tended with the utmost care in the vineyard before undergoing an equally careful vinification. The Syrah that it is made from is a blend from the Chavanessieux and Les Pins plots, and has been vinified in whole bunches. The presence of the stalks guarantees a certain freshness to the future wine. A wine that has been matured for between 11 and 15 months in large containers (600-litre capacity Demi-Muids), which prevent it getting too intensely marked by woody notes.
As you can imagine, tasting reveals a very elegant wine heralded by a lovely ruby-red colour with purplish glints. This unleashes delicate and varied aromas of violet, sweet spices, white pepper, mocha and, of course, red and black fruits. The palate is dense, and proves to be deep yet fresh, enrobed in crisp tannins.
