In 2000, Bibi Graetz decided to upgrade his terroir with local grape varieties (Sangiovese, Canaiolo, Colorino and Ansonica) and old vines (between 50 and 80 years old). No fertilisers have been used for fifteen years and his other practices speak for themselves: restricted use of sulphites, a low proportion of new barrels, and grass cover. This domaine is proud of its Tuscan features.
