Domain: Cerasuolo Valentini

This domain lies in the region of Abruzzo, a mountainous area on the Adriatic coast, and has been producing wine there since the 17th century. Edoardo Valentini, who ran the domain from the early 1950s, was one of the finest winegrowers in the region. His son Paolo Francesco took over the domain after his father's death and continues to preserve his closely-guarded secrets of viticulture and vinification techniques. In the winery, the grapes undergo natural fermentation with ambient yeasts. The wines are not filtered, lending them greater stability and good aging potential. Paolo's father Edoardo was known for his uncompromising work, for instance, when the harvests were being sorted, he would only keep the best grapes and send the rest to the local cooperative.
