Are you looking for a Burgundian estate which produces great natural wines? Well look no further, Philippe Pacalet is the authority on the subject. The oenologist definitely takes after his family. Nephew of Marcel Lapierre, the don of natural wines in Beaujolais, he has chosen to reveal the terroirs in this natural way through his trading estate. Here he produces a Nuits-Saint-Georges 1er Cru which is very memorable indeed. The Pinot noir that it is made from has benefited from an ideal exposure and an oceanic climate with semi-continental influences, and has drawn its distinction from within limestone and marl soils. Made for cellaring, this wine can be aged for up to 20 years depending on the vintage, and reveals an intense and powerful quality. Its blend of aromas is marked by sophisticated notes of ripe black fruit, mocha, cocoa, violet, leather and coffee. A blend of aromas which introduces a rich and powerful palate, structured by tannins which become more refined with time. We recommend opening this wine an hour before it is served, and pairing it with powerful dishes such as a wild boar stew or a cheese full of character.
