The Alsace domaine Julien Meyer is exceptional within the French vineyard. Patrick Meyer, who runs this family domaine, is not only committed to biodynamic cultivation, but also to natural vinification where experimentation takes pride of place. After being grown at an altitude of 250 metres, a location which promotes slow ripening and therefore a complexity of flavours, the Pinot gris was matured in vats. The vats are immobile containers which allow the quintessential qualities of the noble grape variety and its original terroir to be revealed. Vinified without sulphur, the wine unveils a great purity. It has a lovely yellow colour tinted with glints of green which, with time, turn to gleams of gold. The aromas are complex, with hints of sweet spices, honey and undergrowth. We recommend several years of aging to appreciate the smooth texture and bewitching fragrance of this wine. We would then suggest pairing it with Thai cuisine such as poultry in coconut milk and satay sauce, hot brick pastry parcels with goat’s cheese and honey or oven-roasted salmon with white peaches in sesame.
