Our collective understanding of a serum is a concentrated potion that can treat illnesses. Using this meaning of the word, Aurélien Lefort has created this wine made entirely of Auvergne Gamay. After using whole bunches to make the wine, the serum is left in contact with the solid parts of the grapes for five months to extract the maximum colour and flavours from it. The grapes come from vines that are more than a hundred years old; they were planted in 1904. Juicy, concentrated, this Gamay with its deep purple colour reveals intense notes of small red fruits led by raspberry. This natural wine should be enjoyed when it is still young.
