Chambolle-Musigny Vieilles Vignes Hubert Lignier (Domaine) serve at a temperature of 15°C. It will pair perfectly with the following dishes: Terrine de campagne aux figues, Purée de butternut, Foie gras au gros sel.
Le domaine Hubert Lignier nous propose ici un chambolle-musigny issu de vieilles vignes de pinot noir âgées de plus de 50 ans. Celles-ci courent sur 30 ares sur les deux parcelles de Drazey et de Gamayres qui se composent de sols d'argile et de limon. Ces baies sont achetées par le domaine qui les vinifie ensuite. Elles ont fait l'objet d'une culture particulièrement attentive qui se caractérise par des rendements limités ainsi que des vendanges manuelles assurant un tri strict. Le travail en cave est tout aussi soigné et peu interventionniste. Les vinifications se font avec un tiers de grappes entières afin de préserver une certaine fraîcheur. Les levures indigènes enclenchent le processus de fermentation et le vin est élevé longuement sur ses lies (entre 21 et 22 mois) avant d'être mis en bouteille sans collage ni filtration préalable.
La dégustation nous dévoile un vin doté d'une robe rouge vif ornée de reflets rouges brique. De celle-ci s'échappent des notes particulièrement élégantes que certains caractérisent même de « féminines ». Nous recensons ainsi des touches de fruits rouges et noir, de fleurs comme la violette et d'épices très douces. Structuré par des tanins ronds, il est vivifié par une belle et noble acidité.
The excellent reputation of Domaine Hubert Lignier goes back a long way, due to the finesse and concentration of their wines. In 1991 Hubert's son Romain joined the domain. He sadly died in 2004, and two years later Romain's brother, Laurent, joined his father. The domain, practicing sustainable agriculture, counts eight hectares of vineyard close to Morey, Gevrey and Chambolle.
All the work is carried out with quality in mind (manual harvests, low yields, strict sorting); according to Laurent, “75% of a wine's quality comes from the quality of the vineyard”. Most of the grapes grown are Pinot noir, with a small amount of Gamay and Aligoté.
The juice is vinified with little intervention, with wild-yeast fermentation and long maturations of 21-22 months on lees. The wines are not fined or filtered. What we find in the glass is a suppleness with tannins of a velvety character.
