Alongside his prestigious family estate, François de Nicolaÿ decided to start his own wine trading business in the 2000s creating wine only from organic grapes.
For these wines, he uses grapes that are certified organic or biodynamic so that he can show off their full characteristics and the terroirs where they grow. Vinification and ageing are conducted naturally without any additives (some wines are natural while others have a bit of sugar added to them) in an old cellar in Savigny-Lès-Beaune. There is no pumping over or punching down, neither is the wine filtered or clarified. Tasting these wines will leave you wanting more; they are delicious with an airy character. We also enjoy them for their purity.
As the business grows as does the range while the prices remain reasonable for the appellations.
Having lived in Paris for a few years, François de Nicolaÿ, chose to take over the running of the family domain in Savigny-lès-Beaune (Chandon de Briailles) in the early 2000s.
