Bourgogne Aligoté Perdrix (Domaine des) 2023

Aligoté, one of the leading grape varieties in Burgundy, descends from Pinot Noir, just like Chardonnay. Its compact, medium-sized bunches are a charming orange-yellow colour. Perfectly suited to clay and limestone soils, Aligoté reveals its full potential here. Sustainable viticulture methods allow the terroirs to provide the grapes with all the resources and nutrients they need to develop properly. To preserve the fruit, the Aligoté grapes are harvested and sorted entirely by hand. In the cellar, juices are settled and pressed for 24 to 48 hours. The mature wine is then aged in vats for several months.
The elegant gold colour with bright reflections reveals white and yellow fruit aromas with subtle citrus notes. The palate is marked by a fine balance between finesse and fruity acidity, leading to a long finish.
