Pays d'Hérault Les Garrigues Vaisse (Domaine) 2020

Les Garrigues from the Vaisse estate is a red wine made from Cabernet Sauvignon and Merlot cultivated on Aniane soil abundant in rounded pebbles. This Hérault terroir provides a remarkable structure and a great deal of aromatic complexity. After careful harvesting by hand, the winemaking process follows the traditional method, resulting in the best possible expression of these grape varieties. As aging takes place in oak barrels for 24 months, the wine develops woody notes and a lovely, rounded style. Ageing is followed by an additional 24 months in the bottle, a process that allows the wine to further develop and mature.
The result is a full-bodied elixir, both powerful and elegant at the same time, that, from the moment it can be enjoyed, grows in depth and complexity with some years of additional ageing. This wine matches perfectly with rich and flavourful dishes such as roasted leg of lamb with herbes de Provence, roasted duck breast or a platter of fine cheese.
