Chablis Billaud-Simon (Domaine) 2023

This village appellation Chablis is a lovely introduction to Domaine Billaud Simon! They like to remind us that this vineyard is nicknamed “Porte d’Or de la Bourgogne” (Burgundy’s Golden gate), and this is indeed a wine with a lovely, yellow-gold hue. It might surprise you with its lively and perfumed character. Its typical Chablis nose gives off a bouquet of peaches and citrus. The well-rounded palate offers up brioche aromas typical of Chardonnay, though there is a freshness running through it. Once in the winery, the ripe grapes are sorted and pressed. Alcoholic fermentation takes 15 to 18 days before a 9-month maturing process.
