Chablis 1er Cru Fourchaume Dominique Laurent 2019

Fourchaume is certainly one of the most famous Chablis Premier Crus, located just after the Grand Crus on the right side of the Serein River, the body of water that cuts across the vineyard in a south-north trajectory. Dominique Laurent gets his Chardonnay from there, grown on this Kimmeridgian terroir scattered with deposits of minuscule oysters which imparts the minerality the appellation is known for. The hand-harvested grapes are pressed then fermented and aged for many months in barrels crafted from Tronçais forest oak. The wine is bottled without prior fining or filtration.
This pale gold Fourchaume which shimmers green in the light unveils a fresh nose that mixes green apples, citrus fruits, and a touch of flint. A hint of mimosa completes the range of aromas rising from the glass. On the palate, it reveals its beautiful finesse and a wonderful persistence. A wine that can continue ageing in the cellar for many years and pairs just as well with hot oysters as a blanquette of veal.
