Vin de France (anciennement Côtes-du-Rhône) Indigo Aurélien et Charlotte Houillon 2020

Indigo is the red Côtes-du-Rhône from a domain founded in 2016. It is a blend of mainly Syrah with around 10% Grenache noir. The vines used are around 20 years old and are grown organically and biodynamically in soil composed of clay, chalk, and sand. Yields are limited to 17hl per ha in order to optimise grape ripeness and the concentration of aromas, flavours, and textures.
The grapes are harvested by hand. Vinification involves total destemming, a long 14-week maceration, and 14 months of maturation in stainless steel vats. This container allows for a pure expression of the fruit and its terroir. The wine is bottles without sulphur or additives.
This is a juicy cuvée marked by notes of black fruit, gentle spices, liquorice, and flowers (mainly violet). It has an enveloping texture on the palate. We recommend serving this wine in its youth with meat and sauce or a lentil-based dish, for example.
