Sobre la bodega

The Giacomo Borgogno winery is nestled in north-western Italy, in the heart of Piedmont. Established in 1761 by Bartolomeo Borgogno, the vineyard is renowned worldwide for cellaring its wines for over 10 years before releasing them onto the market, establishing the iconic signature of the domain. Work in the vineyards is carried out with great passion, showing the utmost respect for the soil and biodiversity. The domain cultivates its land in accordance with organic farming practices. The owner carries out vinification processes with little intervention, based on the conviction that the perfect balance between man and nature is essential for creating great wines. Yeasts naturally present in the grapes are used for fermentation, while only minimal amounts of sulphur are added to allow the fruit to fully express all its aromas naturally. It is in this peaceful environment that the Italian vineyard produces authentic, fragrant wines that perfectly reflect the terroir and grape varieties of the region. 

Sobre la «cuvée»

An essential grape variety at the heart of the Italian winegrowing landscape, Timorasso is renowned for its white wines, which offer a fine minerality and remarkable longevity. The Timorasso vines, perched at an altitude of 250 metres, benefit from the region’s continental climate, tempered by gentle sea breezes, and an ideal south-westerly exposure. Thanks to the wide variations in temperature, the grapes offer intense aromatic profiles. Once harvested by hand, the grapes undergo cold maceration for three days before being carefully pressed. The musts ferment spontaneously in temperature-controlled concrete vats. The cuvée is then aged for ten months in steel vats and seven months further once bottled before it can be enjoyed.
The clear, pale yellow colour unveils an intense, complex bouquet, in which fruity scents of peach and pear blend beautifully with floral notes of acacia and hawthorn. The whole is magnified by delicious hints of honey. The mouth is perfectly balanced between expressive fruit aromas and a fine acidity, leading to a deliciously long and flavoursome finish.
