Baies Dorées is classified as a Vin de France wine with its roots in France’s southwest, at the heart of the limestone plateaus of Quercy, where the vines meet the heath and truffle patches. This wine embodies the very essence of the Causses known for poor, very chalky and easily permeable soils, which force the vines to adventure deeper in the hunt for nourishment. The grapes are harvested by hand, early in the morning, to preserve their freshness before being pressed directly. The juices are then left to ferment spontaneously with indigenous yeasts and are aged on fine lees for around ten months. During this process, the wine is not punched down nor filtered and sulphur is not added at any stage, allowing the raw minerality of the terroir to be expressed.
The wine has a light yellow colour with speckles of gold. The nose opens with notes of ripe pear, quince, white flowers and chalk. The wine is full-bodied and structured yet taut on the palate with a lingering finish reminiscent of citrus zest and dried herbs.
