Procedente de una familia borgoñona de viticultores, Olivier Leflaive heredó unas veinte hectáreas de viñedos. Tras estudiar comercio en Reims, llevó una vida de artista antes de regresar a Borgoña en la década de los ochenta y asumir la gestión conjunta del domaine Leflaive junto a su prima Anne-Claude. Es entonces cuando decide crear su propia bodega para la crianza y la vinificación. Acude por tanto al enólogo Franck Grux, con quien elabora unos vinos de calidad, además de asequibles, a partir de uvas compradas a otras explotaciones.
Situated in the heart of the Côte de Beaune, Chassagne-Montrachet is renowned worldwide for its fine white wines crafted from Chardonnay. Les Blanchots is a locality named after the pale colour of its limestone soils. Here, the Chardonnay vines grow on predominantly limestone ground rich in crumbly white stones mixed with light clays. This well-drained, south-east-facing terroir ensures steady ripening and lends the wines freshness, tension and a distinctive mineral backbone. Manual harvests are followed by careful sorting. In the winery, fermentation takes place in oak casks using native yeasts, and the wine is then aged for 12 months in cask, with around 25% new oak.
In the glass, it displays a bright pale yellow hue with golden glints. The nose is elegant and precise, led by white flower notes of hawthorn and acacia, alongside white-fleshed fruit like pear and peach, lifted by hints of citrus and subtle oak. On the palate, a clean, silky attack opens onto a creamy texture supported by finely chiselled minerality.
