Distilleria familiare e indipendente. Nel 2007 Ichiro Akuto, nipote del fondatore della distilleria Hanyu, ha costruito una nuova distilleria situata a nord-ovest di Tokyo, nella provincia di Saitama. La distilleria, chiamata Chichibu, ha messo fine a diversi decenni segnati dalla chiusura di diversi siti produttivi e ha permesso a Ichiro Akuto di riprendere il filo della tradizione e dell’esperienza familiare. Nonostante le sue piccole dimensioni, (capacità di 80.000 LAP/anno) Chichibu è stata subito oggetto di molte attenzione e bramosie. Con il nome di "New Born", per 3 anni Ichiro ha proposto in modo esclusivo il suo malt whisky. Nel 2011, è stata prodotta la prima edizione di un piccolo lotto di Chichibu, chiamato The First (7.400 bottiglie). L'accoglienza dei distributori e l'apprezzamento degli amanti del whisky in tutto il mondo è stata immediata e ha collocato Chichibu sulla strada maestra delle distillerie a forte potenziale di collezionabilità. Da allora, Ichiro ha continuato a produrre sempre più versioni single casks, assecondando le richieste dei suoi clienti e rendendo la distilleria ancora più ambita dai collezionisti.
