If Philippe Alliet excels in the art of vinifying Cabernet-Franc, the same can be said of his powers with Chenin Blanc. A wizard at single-variety winemaking, his vines grow in clay and limestone soils receiving the meticulous attentions of traditional cultivation. Wines are vinified in 500l barrels and age for 12 months in used barrels. This cuvée presents a lemony-yellow robe, casting iridescent golden reflections. A seductive bouquet delivers citrus fruit and toffee apple aromas. Equally delicious in the mouth, it pairs perfectly with smoked salmon, dressed with a good squeeze of lemon.

★ Bodega asociadaPhilippe and his wife Claude have been at the helm of Domaine Alliet since 1978. The domain's 17 hectares of vines are planted in the communes of Chinon and Cravant-les-Coteaux; some of the plants are 70 years old. The property owns some superbly located parcels, especially on the Coteau de Noiré, boasting slopes, clay and chalk-rich soil, and a fully south-facing exposure. Philippe Alliet cultivates his vines sustainably and places considerable importance on carefully controlling yields. The wines produced here are benchmarks in the Loire Valley and fly the flag for Cabernet Franc grape with their astonishing freshness, precision and verve. The entire range is truly remarkable. Today, Philippe and Claude Alliet have been joined on the domain by their son Pierre.
