La «cuvée»
Made from Pinot Noir grapes, La Colline des Dames cuvée offers a unique sensory experience, thanks to its terroir and traditional winemaking methods.
The grape variety originates from vines planted in Alsace and grown using organic methods. Manual harvesting guarantees a high-quality yield, while natural winemaking respects the character of the grapes. Semi-carbonic maceration at low temperature (12/14°C) preserves the wine’s freshness, and is followed by ageing in foudres (large capacity wooden tuns) having contained several wines. The wine is bottled without fining, filtration or added sulphites.
On tasting, the translucent vermilion-red colour and orangey hues captivate the eye. The nose opens with notes of red plum, stone, violet and spices, with a hint of smoke. The palate is round and full, revealing aromas of ripe cherry and spices. A delicate acidity provides liveliness while the long finish ends on notes of cherry and peony.
Undisputed icon of the Jura, Jean-François Ganevat has made a reputation for himself as one of the region's top producers. Having learnt the ropes with Jean-Marc Morey in Chassagne-Montrachet, he decided to create his own domain, which he farms organically and biodynamically. Reflecting Burgundian savoir-faire, he produces single-parcel micro cuvées. In the winery, his prefers a hands off approach, allowing the wine to express itself. Domain Anne et Jean-François Ganevat is the name of the négociant business set up by Jean-François and his wife. Quality is top priority, and the couple strive to produce wines in exactly the same way as at their own domain.
