La «cuvée»

The Vaudésir grand cru is from a vineyard which can boast a virtually unique topography for Burgundy: its curving lines and steep slope are reminiscent of an ancient amphitheatre. Separated by a path that follows the fold of the hill, the vines benefit from two different exposures: due south in the north, and southwest in the south. Domaine Louis Michel's plot was planted between 1955 and 1968. The wine is vinified and élevaged in tanks (16 months minimum), as is the case with all the domaine's Chablis wines. Vaudésir is an insanely elegant grand cru. Its dense substance, with a ripe generosity ending on a saline, mineral note, develops gracefully over the years.

In the heart of Chablis, Domaine Louis Michel and Fils is one of the oldest domaines of the appellation. And, most importantly, one of the most consistent. In the family since 1850, it now has some 25 hectares of vines planted on hillsides. The key to its success is the abolition of barrel élevage. As a result, the domaine produces clear, clean, precise non-wooded wines. At the head of the domaine, Guillaume is convinced that the sustainable cultivation of his vines favours the expression of this exceptional terroir. As for his wines, he handle them as little as possible during the vinification and the élevage. This respect for the product and this long-term work are rewarded by obtaining wines to age for ten to twenty years.
