The Monthélie appellation, the immediate neighbour of Volnay and Meursault, remains one of the best kept secrets in Burgundy. Despite this, its wine-growing tradition dates back to the Middle Ages, and it produces wines of remarkable elegance in certain Premier Cru vineyards. The Champs Fulliots climate is situated on a well?exposed hillside of shallow clay?limestone soils over limestone bedrock. This terroir gives the wine an aromatic finesse, freshness and tension, while allowing for good concentration thanks to its excellent drainage. The grapes are gently harvested by hand, sorted carefully and then partially destemmed. Fermentation occurs with indigenous yeasts, followed by 12 months ageing in 15% new oak barrels.
The glass shows a deep, bright ruby-red colour. The nose opens with notes of black cherries, violets and candied strawberry, accompanied by a light woody aroma and a hint of sweet spices. The palate is silky and precise with fine tannins.
