La dirección del domaine René y Vincent Dauvissat, fundado en 1931, ha estado en manos de varias generaciones consecutivas de la familia Dauvissat: el abuelo Robert, el padre René, luego Vincent, que se incorporó a la empresa en la década de 1970, y ahora sus hijos, Étiennette y Ghislain. Este último gestiona hoy el domaine con un respeto firme y constante por el viñedo. Este ocupa un total de 12 hectáreas y, entre todos los crus, produce una media de 70 000 botellas al año. En concreto, abarca las cuatro denominaciones: Petit Chablis, Chablis, Chablis Premier Cru y Grand Cru.
El estricto respeto por el terruño es el lema que guía todo el trabajo: cultivo biodinámico de la viña (sin certificar), rendimientos modestos y vinificaciones poco intervencionistas en barricas de roble.
Los chablis de la finca Dauvissat gozan de fama mundial por su frescura y mineralidad, su pureza y su gran potencial de guarda (y conviene olvidarse de ellos y dejarlos en la bodega durante al menos cinco años). Considerada una de las mejores bodegas de Chablis, la finca René y Vincent Dauvissat elabora vinos de suma calidad que son una apuesta segura.
The cool climate of the Chablis appellation, coupled with Kimmeridgian soils composed of clay-limestone marls that are rich in marine fossils, produces wines with chiselled acidity and sharp minerality. The south- and southeast-facing lieu-dit of Les Fourneaux enjoys generous sunshine, which gives the wine a slightly richer structure than other Premier Crus, without ever betraying the tension so characteristic of Chablis. At Dauvissat, the grapes are harvested by hand, and spontaneous fermentations take place with indigenous yeasts. The wine is aged in old barrels in order to allow the terroir space to shine.
The wine is a pale yellow colour with hints of silver. The nose evokes lemon zest, wet chalk, hawthorn blossom and oyster shell. The palate is pure, direct and salty, with an almost chalky texture and a surprisingly persistent finish. This is a vibrant yet complex wine, patiently crafted over time.
