The Sang de Papète is a genuine return to roots and a tribute to Sophie Guizard’s grandfather who started this Carignan plot not far from the town of Béziers more than sixty years ago. These old vines are cultivated organically and produce very low yields of concentrated berries, with no more than 15 hl per hectare. Their grapes are hand-picked, destemmed, and then fermented in stainless steel vats with natural yeasts over an extended period. Maturing continues for 24 months in second-fill Burgundy barrels, before the wine is bottled in keeping with the lunar calendar, without fining or filtration.
Produced in very low quantities, Sang de Papète reveals an intense bouquet of black and red fruits, peony, violet, and garrigue. Its powerful character is balanced by a beautiful freshness, resulting in a wine of infinite delicacy that lingers for quite some time on the palate. This wine may be enjoyed while young but can also be aged for up to 10 years in a cellar.

Negli anni 2000, Vincent Guizard collabora con Frédéric Poutarlié, viticoltore nonché proprietario del Domaine de Montcalmès, situato nel terroir di Les Brousses, tra Aniane e Puechabon. Qui si occupa di dissodare il terreno, piantando nuove vigne su pendii di galets roulés, un tempo occupati dalla vegetazione della foresta circostante. Nel 2010, quando fonda la sua tenuta con la moglie Sophie, sceglie di conservare questo vigneto che oggi si estende su 8 ettari. In vigna, la coppia utilizza metodi manuali e sostenibili per valorizzare il terroir e la vita del suolo: ogni appezzamento viene coltivato con la massima cura e ogni vite è considerata una varietà sui generis. Vincent e sua moglie padroneggiano persino l’arte dell’innesto, che consente loro di sostituire più facilmente le viti troppo vecchie o malate. In cantina, optano per tecniche naturali che sublimano l’espressione del terroir. Il risultato? Cuvée luminose che testimoniano il grande savoir-faire della tenuta.
