Pouilly-Fuissé Clos de Monsieur Noly Vieilles Vignes Valette (Domaine)

La «cuvée»

A truly unmissable Burgundy white wine! It is cultivated organically, with low-sulphur vinification and an élevage of 84 months in casks. Profoundly aromatic, generous, deep and persistent, it can be enjoyed straight away when opened at least two hours before serving. However, it can also be kept for ten or so years in the cellar, and will pair well with meat or fish in sauce, as well as cheese.

Philippe Valette belongs to the third generation of wine growers in charge of the 8.5-hectare family domaine of the Mâconnais coast, producing exclusively white wines. Converted into organic farming in 1992, the domaine pays special attention to soil and vines throughout the year. The wines are neither filtered nor clarified. Philippe Valette likes to take his time, the élevage of his wines is done depending on their maturity, not according to the market. The wines spend 9, 14 or 18 months in barrels and even up to seven years for certain cuvées. Outstanding wines are exceptional, with a finesse and a rare complexity
