La «cuvée»
This wine is produced with predominantly Cinsault and has a powerful nose, with notes of spices, garrigue and floral aromas. There is a nice texture on the palate, with a mineral element typical of Domaine Hauvette. This cuvée is nicely concentrated, with melted tannins. The finish is lightly smoked. Cellar for up to 10 years to enjoy the wine’s full potential.
Dominique Hauvette is a discrete winemaker whose work is simply remarkable. Located in Saint-Remy-de-Provence, she founded the domain in 1988 with two hectares and a dilapidated winery. The clay-limestone soils and the discerning vinifications and élevage have allowed Dominique Hauvette to raise her domain to the finest in the appellation. The domain has been cultivated in biodynamics since 2003. The reds are racy and intense, whereas the whites are big and ripe, with bitter notes.
