Baux de Provence Hauvette (Domaine) 1995

La «cuvée»

Domaine Hauvette's owner is known for biodynamic viticulture and a preference for low yields of high-quality grapes. This rich and powerful Provencal wine is driven by its intensely indulgent notes of chocolate, black fruits and sweet spice. A nicely-defined tannic structure adds balance and ageing potential, and makes this wine excellent for pairing with full-flavoured foods.

Dominique Hauvette is a discrete winemaker whose work is simply remarkable. Located in Saint-Remy-de-Provence, she founded the domain in 1988 with two hectares and a dilapidated winery. The clay-limestone soils and the discerning vinifications and élevage have allowed Dominique Hauvette to raise her domain to the finest in the appellation. The domain has been cultivated in biodynamics since 2003. The reds are racy and intense, whereas the whites are big and ripe, with bitter notes.
