We recommend enjoying this particularly fine and velvet-like Beaujolais in the first ten years. Perhaps with a terrine or some game. More info

Moulin à Vent Les Deux Roches Domaine du Vissoux - P-M. Chermette 2005
The wine
This Beaujolais wine is made with 100% Gamay cultivated on manganese rich soils. The domaine practices sustainable and organic viticulture and makes its wines the traditional Beaujolais way. This means that the semi-carbonic maceration stage involves “rack and return”, or délestage, and ten days of maceration in tanks. After this, the wine is matured in foudres and pièces for between one and five years to preserve the purity of its fruit. On opening, the wine reveals delicate notes of floral and red and black fruits rounded off by vanilla from its time in wood. The palate is concentrated but light and its nicely blended tannins make for an elegant and velvety texture. Drink this wine within its first ten years.
